Iliò is a superior category extra virgin olive oil obtained directly from olives and solely by mechanical means. It shows a very high density and veiling with green colour and golden yellow reflection.
Its aroma is intensely fruity and grassy with persistent notes of aromatic herbs.
Medium bitterness, rather pleasant and prolonging but never invasive. Spicy at the beginning and in the middle of the tasting, it blends nicely with other gustatory and retronasal perceptions without ever prevailing.
Great fluidity and persistence ascending in a harmonious crescendo.
After only a few months since its launch, Iliò has obtained important international awards for the quality that it distinguishes. From the Ercole olivario to the AVPA in Paris and to the IOOC in London.
You can dribble it onto any toasted whole-wheat bread. It can also awaken your senses if you use it to blend the polenta, especially the typical barley polenta from Barbagia cooked with wild fennel. It is excellent to enhance the taste of pasta, especially if topped with ricotta cheese, dry tomatoes or a delicious venison sauce. It is ideal to season fresh salads and vegetables.
The name “Iliò” is inspired by the history of the ancient Iliensi people and echoes its bond with the traditions of Oliena but open to innovation – a key element of the Cooperative’s values.
